Fumonisin B1 accounts for 70% of food (rice, tea, etc.) and feed samples contaminated byfumonisin, and is the most toxic. It is a water-soluble mycotoxins , stable to heat and not easily destroyed by cooking. Long-term exposure to fumonisins may cause human cancer and birth defects. The current implementation of Good Agricultural Practices (GAP), Good Storage Practices (GSP) and Good Manufacturing Practices (GMP) can reduce fumonisin contamination.
